The spare time that the summer holiday gives us is a great opportunity to enjoy our hobbies and experiment in new things. On warm summer days, I try to avoid eating hot food as much as I can. This summer I decided not to give up on soups, so I started making cold ones! My favorite recipe is Cold Avocado-Cucumber Soup and I just have to share it with you. It’s so easy and tasty!
Ingredients:
Two peeled cucumbers, 2 avocados, 2 teaspoons Thai green curry paste, 2 teaspoons sugar, 2 teaspoons finely grated lime zest, one 13-ounce can unsweetened coconut milk (370 grams), 3 tablespoons fresh lime juice and salt to taste. For garnish: toasted coconut flakes and cilantro sprigs.
How to make it:
In a food processor, puree the cucumbers until smooth. Add the avocados, curry paste, sugar and lime zest. Process until blended. Add 3 1/2 cups of water, the coconut milk and lime juice and process until smooth. Transfer the soup to a large bowl and season with salt. Cover and refrigerate at least 15 minutes until chilled.
Ladle the soup into small bowls or cups, garnish with coconut flakes and cilantro and enjoy.
